Ingredients:


  • 2 large lettuce leaves

  • 1/2 cup of cooked protein (chicken, tofu, or shrimp)

  • 1 cup, lightly chopped, of assorted microgreens (like radish, pea shoots, or sunflower. for a splash of color add our rainbow swiss chard)

  • 1/4 cup of shredded carrots

  • 1/4 cup of sliced cucumbers

  • Your favorite sauce (peanut sauce or soy sauce work great)
